Sisig is a big part of the pinoy culture. It is a turo-turo style and the sisig are served in sizzling plates. Aling Lucing's Sisig is the pride of Pampanga with its original location in the "riles" or located near the railroad in Angeles City. I have tasted different kinds of sisig at turo-turo and restaurants, but Aling Lucing’s is the best.
Below are recipes in makin a yummy sisig:
On this recipe you can use either pork head or lechon pata.
1 1/2 kilo Pork head or lechon pata
1/4 cup grilled liver (diced)
2 small onions (minced)
6 pieces hot chili pepper (minced)
2 tablespoons oil
2 calamansi
1 teaspoon black pepper
1 tablespoon salt
Instructions
1. Boil pork head and remove hair
2. Grill pork head and liver
3. Diced/chopped the pork head and liver
4. Mix the chopped onions, pepper, salt, and “siling labuyo” with the diced pork head and liver
5. Place all in a sizzling plate and wait till the meat becomes brown.
6. Serve in sizzling plate with calamansi and soy sauce.
